Try this soup for a cool, creamy, savory treat.

I love this recipe because it’s so easy and delicious. If you want a quick snack or addition to a meal that’s high in protein and healthy fats, but is also soothing to the digestion (thank you cucumber!), then give this a try. If you’re not a fan of dairy, then just double the avo and omit the yogurt.

Ingredients:

1 English cucumber, peeled and diced ( *optional: 1/4 cup reserved for garnish)
1 avocado, pitted, peeled, and diced (*optional: 1/4 cup reserved for garnish)
1/2 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1/4 cup coarsely chopped fresh cilantro, plus sprigs for garnish
1 cup plain Greek yogurt
1 cup cold water or broth
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
1 drop doTERRA lemon essential oil
*Optional: 1 scallion, white and pale-green parts only, coarsely chopped (about 2 tablespoons)
*Optional: 1 jalapeno, seeded and coarsely chopped

Method:

Puree ingredients in a blender.

Divide soup and reserved cucumber and avocado among 4 bowls.

Cover with parchment paper and allow to chill in the fridge for 30 minutes.

Garnish with cilantro sprigs if desired.

Benefits:

Avocado: Avocado is an excellent source of healthy fats, fiber, folate, vitamins K, C, and B, and potassium. It also contains a wide spectrum of inflammation-fighting nutrients. Avocado also helps increase our intake of two key carotenoid antioxidants—lycopene and beta-carotene—when eaten with romaine lettuce, spinach, and carrots. Cilantro: Cilantro is a powerful cleansing agent which helps remove heavy metals and other toxins from the body. It’s also beneficial for the digestive tract due to its production of digestive enzymes, acids, and juices. Its essential oils stimulate peristalsis, relieve gas, and aid with digestion. Cilantro also has anti-inflammatory and anti-bacterial properties, and helps to increase HDL cholesterol (the good kind), and reduces LDL cholesterol (the bad kind. Cucumber: Cucumbers contain three types of phytonutrients which provide with valuable antioxidant, anti-inflammatory, and anti-cancer benefits. They are also very low in saturated fat, cholesterol and sodium and are a good source of Vitamin A, C, and K, pantothenic acid, magnesium, phosphorus and manganese. Greek Yogurt: Greek yogurt is a thicker, creamier version of “regular” yogurt that boasts high protein, healthy bacteria which support healthy gut flora, and is a good source of calcium. 5-Minute Mediterranean Wraps

Make these wraps in a snap. Throw a few ingredients in a bowl and voilá, a healthy snack or meal.

Eating out of a can is not my forte. However, when the moment calls for an instant snack, sometimes a can of beans is a lifesaver. With this recipe, I just scavenged leftovers from the fridge, added a can of garbanzo beans, a huge dollop of pesto, and rinsed a few cabbage leaves. Presto change-o, there was lunch. Other potential additions: cucumber, chopped red onion, Greek olives, fresh or sun dried tomatoes, feta cheese, avocado, or even hunks of leftover fish or chicken. Perhaps a few more herbs like flat leaf parsley or cilantro would be nice. No wrong way to make a wrap! Enjoy.

Ingredients:

1 large can garbanzo beans
1 can black, green, or Greek olives
1 jar roasted red peppers
1-2 tbs. capers
1/4 cup pesto (or you can just use olive oil, spices, salt and pepper to taste…)
Juice of 1/2 a lemon
Zest of 1/2 lemon
1-2 drops doTERRA lemon oil
Hefty sprinkle garlic salt
Sprinkle cumin
Salt and pepper to taste
Cabbage or lettuce leaves for wrapping

Method:

Empty garbanzo beans into large mixing bowl.

Chop the olives and peppers and add to the bowl.

Add the rest of the ingredients and mix until well-combined.

Salt and pepper to taste.

Scoop a dollop into your leaf of choice. Serve and enjoy!

Benefits:

Bell Peppers: NOTE! Bell peppers, a member of the nightshade family, are not for everyone. They are on the “dirty dozen” list of pesticide laden produce (when not organic), and have been known to cause inflammation in some people. HOWEVER, they have lots of health benefits too: Sweet bell peppers are high in vitamins C and A, and contain other antioxidants. Garbanzo Beans: Also known as “chickpeas,” these beans are particularly high in insoluble fiber, which means you have a squeaky clean colon and feel fuller for longer when eating these legumes. They are also extremely high in lots of nutrients such as manganese, folate, and tryptophan. They are a great source of plant-based protein. If you find legumes make you gassy, try pre-soaking them for easier digestion. Upon returning from an amazing journey down the Amalfi Coast, my body has been feeling a little sluggish. Once in a while it is absolutely vital to fully enjoy the fruits of this world. However, after indulging in lots of meats, cheeses, breads, bubbles, and sweets (hey, I was on vacation!), my body definitely feels the after effects. Thus, this elixir was born.

Basil has unique volatile oils that can help clean and restore your cells, while preventing unwanted bacterial growth (I shudder to think about the plethora of stealthy microbes we met on our trip…yikes!). Combined with the anti-inflammatory and digestion calming properties of coconut and cucumber, this elixir is sure to help you bounce back after a spell of overindulgence.

Make sure to drink lots of purified water, and get a little extra sleep to help your body to cleanse in regenerate. Cheers to your best health!

Ingredients:

Small handful fresh basil
1/2 cucumber, peeled
1-2 cups coconut water
Juice of 1/2 lime
1 drop doTERRA lemon oil
*optional 1 drop doTERRA basil oil

Method:

Put all ingredients in a blender and blend to smithereens.

Strain over a glass (or not), serve, and enjoy!

*NOTE: Basil oil is EXTREMELY potent. If using in this recipe, I invite you to dip a toothpick into the basil oil vial, and stir your blended elixir with it. That way you don’t overpower the flavor with this oil. A dab will do ya!

One of my favorite simple pleasures is to bake on a Sunday afternoon. Whisk together a few ingredients, pop it in the oven and voíla! Just 45 minutes later, your laundry is folded, your house smells like a bakery, and you have a tasty treat to share (neighbors come in handy if you don’t feel like housing an entire pan-ful of sweet, fatty carbohydrates in your belly). If you have a loaf of bread that needs eating, or just feel like making some real-life comfort food, then bread pudding is like heaven in a spoon. My dearest Mom reminded me of this recipe, so I thought I’d share it with you. Bon appétit!

Ingredients:

6 slices day-old bread
2 tablespoons butter or ghee, melted
1/2 cup currants (optional)
4 eggs, whisked
2 cups milk
1/2 cup maple syrup
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Small pinch sea salt
*Optional zest of one orange and a squeeze of orange juice
*Optional 1 drop of doTerra Wild Orange Essential Oil

Method:

Preheat the oven to 350 degrees Fahrenheit.

Break bread into small pieces into an 8-inch square baking pan. Drizzle melted butter/ghee over bread.

If using, sprinkle with raisins or currants.

In a medium mixing bowl, combine eggs, milk, maple syrup, cinnamon, vanilla, salt, and optional orange zest, juice, and essential oil. Whisk together until well-blended.

Pour over bread, and lightly push down the bread pieces with a fork or clean fingers until bread is covered and soaking up the egg mixture. (Just think, giant french toast!)

Bake in the preheated oven for 45 minutes, or until is golden brown and the top springs back when lightly tapped.

Serve warm. Is ridiculously tasty with a decaf Americano, or the coffee beverage of your choice. Enjoy!

Currants:  Currants are a rich source of vitamin C and potassium, and have strong antioxidant properties. They have long been used by some Native American tribes to treat kidney and digestive ailments. See here for more health benefits and nutritional information.

Organic Eggs: (Preferably pasture-fed) Eggs are a good source of low-cost high-quality protein. They provide over 6 grams of protein (13% of the daily value for protein) each, and are a good source of choline, a key component of many fat-containing structures in cell membranes, which is particularly important for brain function and health. Ghee: A favorite among Ayurvedic practitioners, said to help cure ailments from tight muscles to memory loss. Ghee is essentially clarified butter that has been separated from the milk solids and saturated fats. I highly recommend replacing your regular butter with this. Local Raw Milk: This is a VERY touchy subject. So I will leave it to the professionals. See here if you’re interested in learning more about raw milk. Otherwise, good organic milk is a fine alternative.

Wild Orange Essential Oil: Wild orange essential oils is anti-bacterial, anti-depressant, anti-fungal, anti-inflammatory, antioxidant, antiseptic, and carminative (expels gas from the alimentary canal, relieving colic and spasmodic pain of bowels). I love my yoga students. So in honor of my appreciation, I brought  them a plate of citrusy macaroons. They were very well-received. The last couple which remained on the place were even better received by my belly! This is a great base recipe for no-bake macaroons, but they are even more magical when enhanced with edible essential oils. I look forward to trying lavender, lemon, lime, and chocolatey peppermint in the near future. Please let me know what other delicious flavors you try. Hope you enjoy!

Ingredients:

1/2 cup maple syrup
1/4 cup ghee
1/2 cup milk
3 1/2 cups shredded coconut
1 tablespoon organic vanilla extract
2/3 cup nut butter (I like homemade almond cashew, or seed butter)
1-2 drops of doTerra’s wild orange, lavender, or tangerine essential oil.
*Optional: 1/4 cup cocoa

Method:

Slowly bring to a boil the maple syrup, ghee, milk (and cocoa, if using).

Stir often so the mixture does not stick to the bottom of your pan.

Turn the heat down and add the vanilla, nut/seed butter, essential oil, and coconut.

Stir a minute longer then turn off the stove.

Using a spoon, melon baller, or small ice cream scoop, form the macaroons and place them onto a wax paper-lined cookie sheet.

*Can sprinkle with additional coconut for pretty.

Place the cookie sheet in the fridge (or outside if it’s cold enough) and allow to harden for at least 15 minutes.

Sprinkle with corresponding garnish, ie: lavender petals, orange zest, cacao nibs, etc.

Serve and enjoy!

Massaged Kale with Chickpeas and Avo in Tahini Dressing

So, I’m a pacifist at heart. But when I read about massaged kale I was a little skeptical. First fruitarians, now this? But I gave it a try and it actually turned out to be a delicious way to soften the hearty green while making its nutrients more accessible to the average stomach. You can add anything to your massaged kale, but I just happened to have some leftover chickpeas and 1/2 an avocado that was calling my name. And thus this hearty, heart-shaped salad was spawned. What kinds of yummies would you add? Enjoy!

Ingredients:

For the massaged kale:

1 bunch kale, stemmed and sliced into ribbons
Juice of 1/2 a lemon
1 drop doTerra lemon essential oil
1-2 tbs. cold-pressed olive oil
Sea salt to taste

Other Yummies to Add:

1/2 can chickpeas
1/2 avocado (cut into chunks)
*You can add anything else you like: fruits, veggies, cooked or sprouted grains and legumes, nuts and seeds.

Optional Tahini Dressing:

1 tbs. fresh tahini or almond butter
1 tbs. nutritional yeast
1 tbs. lemon juice
Salt and pepper to taste

Method:

In a large bowl, dress kale with lemon juice and olive oil, and a pinch of sea salt.

Roll up your sleeves and massage the kale until it softens and its hue deepens to a deeper green (2 to 3 minutes).

Add the rest of your goodies. Serve and enjoy!

Oregano Grass-fed Beef Stuffed Calamari

My husband and I discovered chorizo-stuffed squid in NYC recently and realized that pasture-fed beef would be a delicious replacement for the chorizo. They’re slippery little devils, so beware you don’t fling a squid across the kitchen.

In any case, if you can find tube squid (the kind sans tentacles, which you can stuff), you can fill them with anything. A great replacement for cannelloni noodles if you’re on the gluten/grain-free bandwagon. Please let me know what kinds of goodies you stuff them with. Enjoy!

Ingredients:

One package “tube” squid

1-2 lbs. local organic grass fed beef

½ 1b. tomatoes

1 onion, chopped

1-2 cloves chopped or pressed garlic

Salt and pepper to taste

1 drop oregano essential oil

Method:

Rinse squid and allow them to marinate in juice of ½ lemon and 1 drop lemon essential oil. Set aside.

Sauté onions and garlic until brown, about 5 minutes.

Add the tomatoes and beef. Sauté until medium cooked. Salt and pepper to taste and allow to cool.

Add 1 drop oregano essential oil and mix thoroughly.

Stuff the squid until they are almost full (the meat will expand when it cooks).

Heat pan with olive oil on medium heat. Sear the stuffed squid until brown on one side. (About 1-2 minutes)

Flip and do the same on the other.

Serve and enjoy!

It’s been f-f-f-frreeeezing here lately. For mornings when I feel the need to perk up and be warm, I add tangerine essential oil to my smoothie. Tangerine essential oil is a natural digestive aid, blood purifier, and circulation enhancer. So if you’re feeling sluggish, add a drop to your breakfast. You’ll be amazed…and inspired to be amazing.

Ingredients: (For 2 Servings)

2 cups coconut water

1 cup frozen cranberries

1 cup frozen blueberries

1 drop doTerra tangerine essential oil

*Optional: 1 Scoop high-quality protein powder

Method:

Put all ingredients into a blender, and blend to smithereens. Divide between two glasses. Serve and enjoy!

Even though my Ayervedic friends would chide me for drinking cold beverages in the winter, I’ve been having a mad love affair with smoothies in the morning. They’re quick, easy, and versatile, and SO much fun to play around with. The most fun ingredients I’ve been experimenting with lately are essential oils.

Today’s smoothie called for lavender. Known as the “Swiss Army Knife” of essential oils, lavender has a myriad of benefits from easing tension and depression to soothing digestive issues. When ingested internally, lavender essential oil can boost your immune system while promoting healthy cell-generation. Did I mention it’s delicious? But don’t take my word for it. Try this:

The temperatures have been delving well into the negative digits where I live, so on days and nights like that the only way to get warm is from the inside out. And thus, this bisque was born. Sweet potatoes pack a nutritional wallop as they contain more beta carotene than most of their orange-hued counterparts. They’re also rich in vitamins A, B6, and C, as well as the mineral manganese, which promotes healthy bone structure and metabolism, absorption of calcium, proper functioning of thyroid and sex hormones, regulation of blood sugar levels, and the metabolism of fats and carbohydrates. Think thin!

This soup is warm, sweet, and spicy, and has that unmistakable aromatic flavor of lemongrass. Lemongrass essential oil is known for its antibacterial, anticancer, antidepressant, antiseptic, anti-inflammatory effects, and is great for the digestive system.

Sweet potato and lemongrass essential oil are a powerful duo which fight back against internal inflammation while promoting healthy tissue regeneration, so grab a spoon and enjoy!

Ingredients:

3 tablespoons olive oil

1 large onion, diced

2 inches piece gingerroot, peeled and minced

1 jalapeño pepper, deseeded and minced

4 garlic cloves, minced (I just smash it with the broad side of a knife or use a garlic press)

3 lbs. sweet potatoes, peeled and cut into 1/2 inch slices

6 cups vegetable broth (this makes a thick soup, use 7 cups if you like it thinner)

2 stalks lemongrass, outer dry leaves removed and bulb-like base crushed (again, the broad side of a knife works wonderfully here)

7 ounces coconut milk

salt & freshly ground black pepper

1-2 drops lemongrass essential oil

Method:

In large, heavy soup pot, heat the oil medium-hot and sauté the onion until translucent, about 5 minutes.

Add the ginger, jalapeno, and garlic and sauté 2 minutes-ish more.

Add the sweet potatoes and broth. It should be just enough broth to cover the sweet potatoes.

Tie the lemongrass stalks together with string and put the bulb/base ends into the soup.

Bring the liquid to a boil, reduce heat and let simmer until the potatoes break apart, about 15 minutes. Remove from heat.

Discard the lemongrass stalks. Puree the soup (using an immersion blender or in batches in your blender) and return to pot.

*Optional for Fussy Diners: Strain the soup through a fine sieve (I omitted this step).

Stir in the coconut milk and 1-2 drops lemongrass essential oil. Season with salt and pepper. Garnish with a drizzle of coconut milk for pretty. Serve and enjoy!

Onion:  Like garlic, onions are high in sulfur (and while that might make us a little, ahem, stinky, this may be an important part of a our otherwise sulfur-deficient diets.
